I used just one chicken breast for these salads and saved the rest for the lunch leftovers. My favorite thing in life is time spent around the table. I have rice vinegar in my cabinet already. Because the ingredients have true staying power, this salad is so easy to meal prep for the week and have everything ready to go. It reminds me of the Chinese coleslaw I made a few weeks ago, but with chicken and lettuce and a dressing that sounds phenomenal!
